We all have childhood food favorites, and I think if we asked around the majority of people my age and lots of other ages would include Nilla Wafers. I know a fan favorite for a lot of folks is the Nilla wafer banana pudding thing, but not mine. My favorite thing to do with those little golden circles was to dip them into my moms delicious sweet tea until they were soggy and about to fall apart, then quickly toss them in my mouth before they sank down into the cup. I don't know why, but this really is a comforting memory. A quiet, comfy memory. And I still love to do that, though I have discovered I can't find Nilla wafers here! But thanks to Alton Brown of Good Eats fame, I can make them!
Vanilla Wafers
1 1/2 c all purpose flour
3/4 tsp baking powder
1/2 tsp salt
1/2 c butter, softened
1/2 c sugar
1 egg
4 tsp vanilla extract
1 tbs whole milk
Heat oven to 350 F, line two cookie sheets with parchment. Sift flour, baking powder, and salt together.
Cream butter and sugar.
Add egg and mix. Then add vanilla and sugar.
Add flour mixture and mix until just incorporated. Mixing too much will make the cookies tough.
Chill batter for ten minutes.
Scoop batter in 1 tsp balls onto pans, use a spoon dipped in cold water to flatten slightly.
Bake 15-20 minutes until golden brown! Move to cooling rack to cool completely.
Let the memories begin!
