Harvard spice cake
1/2c butter softened
2 c light brown sugar
1 egg or 2 egg yolks
1 c sour milk (buttermilk)
1tsp baking soda
1/2tsp cinnamon
1/4tsp nutmeg
2 1/4 c flour
Cream butter and sugar, add egg. Sift dry ingredients together and add alternately with milk. Bake in 9x9 tin at 350 F for 35 minutes or until toothpick inserted in the middle comes out clean. I personally don’t care to put a frosting on this cake but when I say that to my dad he usually says “But why wouldn’t you?” So, I suggest a cream cheese frosting.

Banana Bread
One of my favorite
things to do is bake, and my favorite way to bake is by following a recipe by
Alton Brown. I have his cookbook “I’m Just Here for More Food”, and I’m
thinking about baking my way through it on this blog. What do you think? Alton
Brown is my culinary hero, he really got me into cooking and baking by
explaining the science of it all, and I love it! I’ve been following him since
2004, and he has taught me so much! In “I’m Just Here for More Food” Alton,
ahem Mr. Brown teaches the different methods of baking and the science behind
each method. After reading this book I can now make up my own recipes and get
the baked good I desire! If you have a desire to bake (or just a desire to eat
baked goods) I strongly suggest this book. As well as educational Mr. Brown is
quite funny, as I’m sure you know if you’ve ever seen his show Good Eats.
Here is a recipe from that book that I use frequently and always enjoy.
Banana Bread!
Ingredients
1/3 cup oat flour
1 2/3 cup whole wheat flour
3 bananas
1 cup sugar
2 large eggs
8 tablespoons butter
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
Directions
Preheat oven to 350F
Grease a loaf pan and line with wax paper
Combine the bananas and sugar and mix with a potato masher until smooth
Combine the melted butter, eggs and vanilla extract in a separate bowl then add the banana sugar mixture.
Combine the flours, baking soda, and salt in another bowl. Add to the combined wet ingredients.
Pour batter into the pan
Bake for 50 minutes - 1 hour or until center registers 210F and a toothpick stuck in the center comes out clean.
Allow to cool on stove top for 15 minutes then remove from pan and transfer to a cooling rack and allow to cool completely before slicing.
